WHAT WE DO
At Capital K Distillery, our craft begins with a deep respect for local Manitoba agriculture—we carefully select top-quality grains directly from local farmers, ensuring we start with the finest foundation for our spirits.
We mill these grains and combine them with hot water in our stainless-steel mash tun, where enzymes work to convert starches into sugars. Yeast is then added, and the mixture ferments for seven days, naturally producing alcohol, carbon dioxide, and the distinct character that defines our spirits.
After fermentation, we distill twice to refine our spirit: first in a 4-plate stripping still to create "low wine" (55% ABV), then in a 16-plate spirit still to reach 94%-95% purity. We finish with weeks of carbon filtering, ensuring every drop is exceptionally smooth—this refined base becomes our flagship vodka, gin, and all our flavoured and infused spirits.
Pride drives every step: we craft in small batches to guarantee quality and consistency, and every bottle is meticulously hand-bottled, sealed, and labelled right here at our distillery in Winnipeg, Manitoba, Canada.

WHO WE ARE
Located in the heart of Winnipeg, Capital K Distillery is Manitoba's first family-owned and operated producer of handcrafted spirits. Our first product, Tall Grass Vodka, was proudly launched in the fall of 2016, followed by Tall Grass Gin and the rest of the Tall Grass spirits line. WPG Vodka, our value brand, was introduced in 2019.Tall Grass Whisky was introduced in 2022.
Our traditional craft distilling process begins with a controlled hand milling or mashing of locally grown grain. Capital K Distillery takes pride in selecting only the best Manitoba-grown produce for our craft spirits.
